Ashly Hicks

With a rich history of culinary excellence, Ashly has carved an indelible path in the world of gastronomy over the past two decades. His journey began at the age of 15 when his innate passion for food became apparent, setting the stage for a remarkable career ahead.

After being recognized as the Apprentice of the Year at Moreton Institute of TAFE in 1999, Ashly embarked on a transformative chapter by relocating to London from 2004 to 2006. During this period, he had the privilege of working under the tutelage of culinary legends Gordon Ramsay and Tom Aikens, contributing to their renowned establishments, and playing a pivotal role in achieving global acclaim.

Returning to Australia, Hicks continued to ascend the culinary ranks, joining The Buffalo Club in Brisbane in 2009 as Sous Chef before swiftly ascending to the position of Head Chef and co-owner in 2010. His visionary leadership propelled The Buffalo Club to unprecedented heights, earning it two Gourmet Traveller stars, Courier Mail Good Food Guide stars, and a coveted position in the Australian Gourmet Traveller Top 100 restaurant guide.

In 2012, Ashly assumed the role of Head Chef at Circa the Prince, where his gastronomic prowess earned the restaurant two Chef Hat status and cemented his reputation as a force to be reckoned with. His tenure at Circa was marked by innovative culinary creations and a commitment to excellence that resonated with diners and critics alike.

The subsequent years saw Ashly continue to push the boundaries of gastronomy, spearheading the openings of Garden State Hotel in 2016 and Hotel Esplanade in 2018, both of which garnered national acclaim and further honed his skills for running the culinary side of large multi-faceted venues with several stand-alone restaurants, dining spaces and multiple menus/ food offers running simultaneously solidified his commercial management and leadership within trailblazing hospitality groups.

Currently, Ashly is utilizing all his experience alongside the Darling group to innovate and be an industry leader in cafes, restaurants, and events. His unwavering dedication to hospitality excellence and passion for pushing the boundaries of gastronomy continue to drive his success in shaping the culinary landscape of Australia.

His achievements have been duly recognized by the Australian Hotels Association (AHA), with Ashly achieving multiple awards, including AHA National Chef of the Year.

In addition to his culinary endeavours, Hicks is a passionate advocate for mental health awareness and positive kitchen culture within the hospitality industry. He has collaborated with industry organizations to host conferences addressing these critical issues, showcasing his commitment to creating a supportive and nurturing environment for industry professionals.

With a storied history of culinary excellence, an impressive array of accolades, and a relentless pursuit of innovation, Ashly continues to inspire and captivate with his  creations, leaving an indelible mark on the gastronomic landscape of Australia.
