Lauren Mathers is a regenerative farmer and butcher from Barham in the Southern Riverina of NSW. As founder and owner of Bundarra Farm, Lauren has been an advocate for local food systems for 15 years. Having first established a local farmers market and food group for her region, she has subsequently founded the Barham micro-abattoir and Murray Plains Meat Cooperative which now processes multi-species livestock for local farmers. She manages her farm, her butchery and its small team of butchers and packers in Barham where all her free range Berkshire pigs, heritage meat chickens, eggs and beef cattle are value-added and packed before being sent directly to her customers.
