Markus Werner

Markus Werner, Culinary Director, is a highly respected leader in the hospitality industry, responsible for the culinary direction and introducing new trends, revitalizing over 50 venues across Australia, New Zealand, and Asia. With a focus on treating each site as a unique enterprise, Markus ensures that every venue reaches its full potential. Since joining Delaware North in 2011 as Executive Chef for Melbourne and Olympic Parks, he has overseen high-profile events like the Australian Open, opening of the MCG and opening numerous new sites and restaurants. He demonstrating exceptional organizational skills, creativity, and team leadership.

Markus’s culinary journey began in Germany, where his training instilled a lifelong passion for the “paddock to plate” concept. His career includes executive culinary roles at Crown Casino and Burswood Entertainment Complex, worldwide Hilton hotels and he holds the title of Master Chef in both Germany and Australia.

He is passionate about mentoring young chefs and giving back to the development of the next generation of talent.  His leadership has earned him accolades and awards both locally and internationally.

Markus is deeply committed to carefully sourced produce from individual local and specialist suppliers. Handpicked ingredients, traditional processes. No replicas, no shortcuts. Uncompromising quality. Flavours that tell a unique story. His quest is for the considered care and attention by the producer, a focus on sustainability and the community.
